We're big fans of the simple pesto recipe with fresh basil leaves, pine nuts, Parmesan cheese, extra virgin olive oil, garlic, and salt & pepper.
RECIPE
INGREDIENTS
2 cups fresh basil leaves, packed
1/2 cup freshly grated Parmesan cheese
1/2 cup extra virgin olive oil
1/3 cup pine nuts
2 garlic cloves, minced
1/4 teaspoon salt, more to taste
1/2 teaspoon salt & ground black pepper
INSTRUCTIONS
1. Pulse basil and pine nuts in a food processor.
2. Add the garlic and Parmesan cheese.
3. While the food processor is running, slowly and carefully add the olive oil in a steady small stream (that will help the paste emulsify and help avoid the olive oil separation).
4. Stir in salt and ground black pepper, and add more to taste. Enjoy!
